What’s better than a quick and easy dinner you can leave to cook on your stovetop while you help kiddos with homework or fold a load of laundry? This Beef Stew uses only one pot plus just a few utensils making cleanup a breeze. (The stew needs to simmer for 1.5 hours but it’s quick to throw together and forget about it for awhile.)
Let’s go right to it:
Easy Stovetop Beef Stew
- 2 pounds Stew meat
- 32 ounces Beef or vegetable broth
- 1 pound carrots, chopped (I used 1 bag of petite carrots)
- 8 medium potatoes, chopped in 1/2″ pieces
- 28 ounce diced tomatoes
- Half of 1 white or yellow onion
- Chopped garlic
- Italian seasoning
- Bay leaf
- Olive oil, salt, pepper
- Optional: celery
Add olive oil, garlic and onion to large stockpot. Cook for 1-2 minutes. Add Stew meat. Cook on medium heat until brown on outside and mostly cooked through.
Add remaining ingredients and bring to a boil. Reduce heat to low and simmer for 1.5 to 2 hours, stirring occasionally.
Voila! That’s it! Easy, nutritious, filling and warm. Great on cold winter evenings.
Serve with Italian bread to soak up the yummy juices left in your bowl.
